    吃“七样菜”拿好意头

     

    初七“人日”,广州人俗称“众人生日”,又叫“人胜节”。话说女娲创世,在依次造出了鸡狗猪羊牛马六种动物之后,在第七天创造了人,因此,初七这一天,就成了人的生日。以前在这一天,民间会举行许多热烈隆重的活动以示庆祝,比方说,合家欢聚吃“七样菜”共叙天伦,在家门前烟火熏天饼避瘟,甚至出外郊游登高祈福。这些庆祝方式,大嘴一直按照传统全部都做了,小时候是为了配合老人家的一番心意,被动而为;现在,不仅是为了图个吉利,更是想过年气氛更加热闹一些。

    传统的“人日”菜式非“七样菜”莫属。“七样菜”,顾名思义,就是指七种蔬菜,其中五种一般是固定不变的:芹菜、蒜、葱、芫荽(香菜)、韭菜。芹菜的“芹”谐音“勤”;蒜谐音“算”;葱谐音“聪”;芫荽的“芫”谐音“缘”;韭菜的“韭”谐音“久”,这五种菜配合在一起,味道怎样还是其次,主要为了过年图个吉利。而另外两种就按照各地的风俗和口味,灵活搭配。有些地方用鱼、肉来代替,鱼表示“年年有余”,吃肉代表生活富裕,甚至也有用水果来代替的。大嘴小时候也吃过这道热烈而隆重的“七样菜”。老人家说,吃了“七样菜”,那一年就可以捡金拾银,发大财了。

    初七的时候,家里的老人会起个大早,忙着准备,把这“七样菜”放在一个锅里一起煮,也叫“七宝羹”,全家人一起吃,并且每人都要吃一口。这个风俗现在在潮汕和广州地区还一直沿袭着。但更多的人在初七“人日”爱吃什么就吃什么,而过年的菜式均是好意头,大红乳猪件称“金玉满华堂”、发菜扣蚝豉称“发财常好市”、美极罗氏虾称“新春笑哈哈”,大家的选择多了许多,也就不再拘泥于“七样菜”了。

    过生日当然少不了长寿面,“人日”也不例外,这个是大家都知道的。但大家知不知道“人日”要吃乳鸽呢?这里有个故事,话说南唐时代,有个战功显赫的都虞侯,他认字不多,把“鸽”字误认为“人日鸟”三个字,因此他认为“鸽”就是在初七“人日”食用而得名的,大家为了巴结他,也在“人日”这天吃起了鸽子,久而久之,乳鸽就成了“人日”宴席上的第一道菜。
